The husband and I are trying out a new low-carb diet. I thought it would be really difficult because I am a bread and sweets lover {uh..probably how I got into the position of needing to be on a diet in the first place}. We are actually really enjoying it, though! I’ve been feeling great, full of energy, and not at all hungry. The only somewhat difficult part of this has been figuring out the foods we can and can’t eat, and coming up with fun new recipes.
Beef & Tomatoes in Cream Sauce was the first low-carb meal I made for the family. It was so delicious – both of my boys loved it! It was easy to make and Atkins friendly.
Ingredients:
Ground Beef
Cauliflower
Tomatoes
4 oz. Low-Carb Cream Cheese {I used 1/3 less fat Philadelphia}
1 C. Whipping Cream
1 Tbsp. Butter
Salt & Pepper to Taste
Chop up the tomatoes and cauliflower.
Cook up the ground beef and cauliflower, then drain both and keep them warm until the sauce is finished.
Melt the cream cheese and butter over medium heat. Add in the whipping cream and salt & pepper to taste. Bring to a light boil, stirring occasionally. Allow the sauce to simmer until thickened.
I poured my cream sauce all over the cauliflower and then took a single bite of all three elements: tomato, beef, and cauliflower.
This was a deliciously hearty low-carb meal. Cauliflower is a great replacement for pasta and rice, and with the cream sauce on top, it tasted much like fettuccine alfredo!
I’ll keep you guys up to date on the low-carb diet. Our scale is broken, but I’ve lost a total of 7.5 lbs so far *woop woop*!






























I appreciate this post! I always wonder how the beautiful food bloggers stay so nice and slim while cooking the wonderful sweet things that they do. My husband and I are also trying low carb. Yesterday I made some pretzel bites and cookies for someone — unfortunately I ate some!! So what’s the trick — just not to bake??
That’s what I’ve been finding so far! Though, I did recently find a low-carb, crustless cheesecake that looked pretty good. I’ve also found an ice cream sandwich recipe that’s low-carb. As soon as I try them out, I’ll report back!
This sounds pretty good- I’ll have to try it. Cauliflower has been showing up everywhere these days for low-carb. I do love it with cheese. lol
