Since we had mostly vegetarian meals to deal with, there was no real cooking preparations. I basically just had to organize the ingredients and put them together to freeze. This did save a bit of prep time, and rather than 4 hours it was probably closer to 2.5/3 hours… Not too shabby for 27 meals!

Black Bean Taco Soup
Ingredients: onion, taco seasoning mix, frozen corn, black beans, stewed tomatoes, tomato sauce, diced green chiles
Crock Pot Broccoli Three-Cheese Soup **family favorite
Ingredients: vegetable or chicken broth, milk, frozen broccoli, onion, 3 cheeses, nutmeg
Crock Pot Vegetarian Lasagna Soup
Ingredients: vegetarian crumble, vegetable broth, water, minced garlic, parsley, basil, onion, diced tomatoes, tomato paste, v8 juice, frozen spinach, uncooked shell pasta
Vegetarian Chili with Sweet Potatoes
Ingredients: red onion, green bell pepper, minced garlic, fire-roasted diced tomatoes, black beans, kidney beans, sweet potato, chili powder, cumin, unsweetened cocoa powder, cinnamon
Slow Cooker Lentil & Veggie Stew
Ingredients: frozen corn, red potato, carrots, onion, celery, frozen green beans, tomato juice, vegetable broth, dry lentils, paprika
Sweet & Tangy Meatballs **family favorite
Ingredients: chili sauce, grape jelly, frozen meatballs
Slow Cooker Zucchini Ziti
Ingredients: marinara sauce, whole grain pasta, fat free cottage cheese, mozzarella, zucchini, spinach, oregano, basil
Slow Cooker 2-Potato Vegetable Soup
Ingredients: sweet potato, russet potato, onion, Italian tomatoes, bouillon cubes, frozen peas and carrots
Smoked Pumpkin Chili
Ingredients: onion, minced garlic, dark kidney beans, corn kernels, diced tomato, pumpkin puree, vegetable broth or beer, olive oil, paprika
No-Chicken Cacciatore
Ingredients: chunky vegetable spaghetti sauce, zucchini, green pepper, onion
Chicken & Vegetable Soup
Ingredients: tomato soup, tomato sauce, chicken broth, zucchini, frozen mixed veggies, minced garlic, chicken breasts, onion powder, basil
Slow Cooker Leek & Potato Soup
Ingredients: leeks, potatoes, carrots, celery, minced garlic, vegetable broth
Cheese Tortellini
Ingredients: frozen spinach, Italian diced tomatoes, cream cheese, vegetable broth, frozen cheese tortellini
Three-Bean Chili
Ingredients: red and green bell peppers, minced garlic, onion, crushed tomatoes, beer, pinto beans, black beans, kidney beans, chili powder, cumin, cayenne
Crock Pot Vegetarian Minestrone
Ingredients: vegetable broth, crushed tomatoes, kidney beans, onion, celery, carrots, green beans, zucchini, minced garlic, chopped spinach, parmesan, macaroni, parsley, oregano, thyme
Gnocchi with Kale, Cilantro & Cashew Pesto
Ingredients: gnocchi, kale, cilantro, minced garlic, olive oil, cashews, lemon juice, parmesan cheese
Honey Sesame Chicken **family favorite
Ingredients: chicken breasts, honey, soy sauce, onion, ketchup, oil, minced garlic, red pepper flakes, cornstarch, sesame seeds
Herb & Ricotta Stuffed Shells **family favorite
Ingredients: jumbo pasta shells, olive oil, minced garlic, ricotta cheese, egg, parsley, basil, lemon zest, parmesan, tomato sauce, mozzarella
Chicken Vegetable Taco Soup
Ingredients: Mexican style tomatoes, tomato sauce, chicken broth, carrots, onion, celery, zucchini, chicken breasts, parsley, oregano
Vegetarian Breakfast Burritos
Ingredients: breakfast potato rounds, eggs, milk, salsa con queso, tortillas

I’m glad it’s helpful! I’m hoping to! Right now I’m trying to loose this baby weight, so I’m doing the Atkins diet. That makes the frozen meals a little difficult. But I have had several people ask, so keep an eye out!

You show canned chicken breast in these photos. Is that just for the photo? Did you use fresh chicken breast instead? That is what I am thinking.

I actually used canned for a lot of the recipes! I’ve found that canned is MUCH easier for preparation and cooking. Plus, once everything is cooked you can’t really tell.
